Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Begin by cleaning the 700 g of firm white fish. Rinse it under cold water and pat dry with paper towels to remove excess moisture. This ensures the fish will sear properly without steaming.
  2. Peel and finely chop 1 onion. Heat 80 ml of oil in a large skillet over medium heat. Add the chopped onion to the skillet and sauté until it becomes soft and translucent, about 5 minutes. This creates a fragrant base for the curry.
  3. While the onion is cooking, dice 2 tomatoes. Add the tomatoes to the skillet with the onions and stir in 1 tsp of turmeric. Cook until the tomatoes break down and the mixture becomes a thick, aromatic paste.
  4. Season the paste with fine sea salt and black pepper to taste. Stir well to combine the flavors. The mixture should be vibrant in color and fragrant, indicating the spices are well-cooked.
  5. Gently place the fish pieces into the skillet, nestling them into the tomato-onion mixture. Cook the fish over medium heat, spooning the sauce over the top occasionally, until the fish is just opaque and flakes easily with a fork. This should take about 5-7 minutes depending on the thickness of the fish.
  6. Taste the curry for salt, adjusting if necessary. The flavors should be balanced with a hint of warmth from the turmeric and a slight sweetness from the tomatoes.
  7. Serve the Persian Fish Curry immediately, ensuring each portion has a generous amount of sauce. This dish is best enjoyed fresh, with the flavors melding beautifully on the plate.
