Ingredients

Method

  1. Begin by cleaning the 2 whole fish thoroughly under cold running water, removing any scales and innards. Pat them dry with paper towels to ensure the skin crisps up during cooking. Make three diagonal slashes on each side of the fish to help the flavors penetrate.
  2. In a large skillet or grill pan, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add a handful of your chosen fresh herbs, such as parsley or cilantro, to the pan. Allow the herbs to sizzle for about 30 seconds until they release their aroma, infusing the oil with their fragrance.
  3. Season the fish generously with fine sea salt and black pepper, ensuring you get some seasoning into the slashes. Place the fish in the pan, laying them down gently to avoid splattering the hot oil. Cook the fish for about 4-5 minutes on each side, or until the flesh turns opaque and flakes easily with a fork.
  4. While the fish is cooking, cut a lemon into wedges. Once the fish is done, remove it from the pan and place it on a serving platter. Squeeze fresh lemon juice over the top, allowing the acidity to brighten the flavors.
