Season each chop generously with fine sea salt, black pepper, and 1 teaspoon of paprika, ensuring that all sides are evenly coated. Let them sit at room temperature for about 10 minutes to allow the flavors to begin infusing the meat.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed skillet over medium-high heat. Once the oil is shimmering, place the lamb chops in the skillet, being careful not to overcrowd them. Sear each side until a deep golden-brown crust forms, about 3-4 minutes per side. The chops should release easily from the pan when they are ready to turn.
  3. Once browned, reduce the heat to medium-low. If you prefer a braised texture, add a splash of water to the pan and cover it with a lid to create steam.
