Persian Lentil Bowl 2 is a comforting dish that reflects the way Persian families cook at home, where salt is measured by instinct and oil is used liberally. The dish is a simple yet flavorful combination of brown lentils, onions, and tomatoes, seasoned with cumin, salt, and black pepper.

This dish is enjoyed around Persian home tables, where it's served for sharing among family and friends. The lentils offer a hearty base, while the cumin and tomatoes provide warmth and a touch of acidity, creating a balanced and satisfying flavor profile.

Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by rinsing 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris and ensures the lentils cook evenly. Set them aside to drain.
  2. Peel and finely chop 1 onion. Dice 2 tomatoes into small pieces. These will form the aromatic base of your dish, so aim for uniform pieces to ensure even cooking.
  3. In a large pot, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, which should take about 5-7 minutes. The onion should not brown, as we want a gentle sweetness to develop.
  4. Add 1 tsp of cumin to the onions and stir well. Allow the cumin to toast in the oil for about a minute, releasing its warm, earthy aroma. This step is crucial for infusing the dish with its characteristic Persian flavor.
  5. Add the diced tomatoes to the pot. Stir to combine with the onions and cumin. Cook until the tomatoes break down and form a thick, fragrant mixture, about 5 minutes. The tomatoes should lose their raw edge and meld into the onions.
  6. Add the rinsed lentils to the pot, stirring to coat them in the tomato and onion mixture. Pour in enough water to cover the lentils by about an inch. Bring to a gentle simmer, then reduce the heat to low. Cover the pot and let the lentils cook until they are tender but not mushy, stirring occasionally. The lentils should hold their shape but be soft to the bite.
  7. Once the lentils are cooked, taste and season with fine sea salt and black pepper to your preference. Adjust the seasoning gradually, tasting as you go to achieve a balanced flavor.
  8. Serve the Persian Lentil Bowl warm, inviting everyone to share from the same dish, as is traditional in Persian home cooking.
