Ingredients

  • 300 gbrown lentils
  • 1onion

  • 2 tbspoil

Method

  1. Start by rinsing 300 g of brown lentils under cold water until the water runs clear. This removes any dust or debris. Set them aside to drain. Dice 1 onion finely, as this will form the base of your dish. Chop 2 tomatoes into small cubes, ensuring they are evenly sized for consistent cooking.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft, about 7-10 minutes. This gentle cooking allows the onion to release its sweetness, forming a flavorful base.
  3. Add 1 tsp of cumin to the onions and stir well. Cook for an additional minute until the cumin is fragrant, which will deepen the flavor of the dish. This step ensures the spices are evenly distributed and their flavors are fully released.
  4. Add the drained lentils to the pot, stirring to coat them with the onion and cumin mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and cook until the lentils are tender but not mushy, which should take about 20-25 minutes. The lentils should hold their shape and have a creamy texture when bitten.
  5. Once the lentils are cooked, add the chopped tomatoes to the pot. Stir to combine, allowing the tomatoes to soften and meld with the lentils for about 5 minutes. The tomatoes should be tender but still retain some of their shape, adding a fresh note to the dish.
  6. Taste the lentil mixture and season with fine sea salt and black pepper to your liking. Stir well to ensure the seasoning is evenly distributed. The salt will enhance the natural flavors of the lentils and tomatoes, bringing the dish together.
