  1. Begin by ensuring the 600 g of squid rings are clean and thoroughly dried. This step is crucial as excess moisture can prevent the squid from searing properly, leading to a rubbery texture instead of the desired tender bite.
  2. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add 4 cloves of garlic, finely chopped. Stir continuously for about a minute until the garlic becomes fragrant and lightly golden, which will infuse the oil with its aroma.
  3. Add the squid rings to the skillet in a single layer, ensuring they are not overcrowded. Cook them for about 2-3 minutes, stirring occasionally. The squid should turn opaque and firm, indicating they are cooked through but still tender.
  4. Sprinkle chili to taste over the squid, stirring to combine. This will add a subtle heat that complements the natural sweetness of the squid.
  5. Squeeze the juice of one lemon over the stir-fry, stirring well to evenly distribute the citrus flavor. This will brighten the dish and enhance its flavors.
  6. Taste the stir-fry and add fine sea salt to taste, keeping in mind that the salt should enhance the natural flavors without overpowering them.
