Ingredients

  • 600 gsquid rings

Method

  1. Start by ensuring the 600 g of squid rings are thoroughly cleaned. Rinse them under cold water to remove any grit or debris. Pat them dry with a clean kitchen towel to remove excess moisture, which helps in achieving a good sear during cooking.
  2. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add 4 cloves of garlic, finely minced. Stir the garlic continuously for about 30 seconds until it becomes fragrant and just begins to turn golden, releasing its aroma into the oil.
  3. Carefully add the squid rings to the skillet, spreading them out in a single layer. Increase the heat to high and stir-fry the squid for 2 to 3 minutes. Watch for the squid to turn opaque and curl slightly, indicating they are cooked through but still tender.
  4. Add chili to taste, adjusting the amount based on your preference for heat. Squeeze the juice of one lemon over the squid, stirring well to combine. The lemon juice will add brightness and balance the flavors.
  5. Taste the stir-fry and add fine sea salt to taste, keeping in mind that Persian cooking often uses salt generously to enhance flavors. Stir everything together once more to ensure the seasoning is evenly distributed.
  6. Serve the Persian Squid Stir-Fry immediately while it's hot, ensuring the squid remains tender and the flavors are fresh. This dish is best enjoyed as part of a shared meal, embodying the communal spirit of Persian dining.
