Tagliolini al Tartufo

Serves 4

Tagliolini al Tartufo

In the picturesque town of Alba, nestled in Italy's Piedmont region, Tagliolini al Tartufo finds its origin. This dish is a hallmark of autumn, when the local truffle season reaches its peak, drawing gourmets from around the world to experience the earthy indulgence of freshly harvested truffles. It's a celebration of the land's bounty, best enjoyed in the cool, crisp air of a fall afternoon.

Tagliolini al Tartufo is a symphony of rich and delicate flavors, where the thin strands of pasta embrace the luxurious aroma of black truffle. The butter melds seamlessly with the Parmigiano-Reggiano, creating a creamy, umami-laden coating that clings lovingly to each strand. The dish is an elegant balance of simplicity and decadence, a true reflection of Piedmont's culinary finesse.

Ingredients

  • 400 gtagliolini
  • 40 gblack truffle
  • 80 gbutter
  • 60 gParmigiano-Reggiano
  • to tastefine sea salt

Method

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous amount of fine sea salt until the water tastes like the sea. This will season the tagliolini as it cooks, enhancing the overall flavor of the dish.
  2. While the water is heating, finely grate the 40 g of black truffle using a microplane or a fine grater. Set aside. This will ensure the truffle's aroma and flavor are evenly distributed in the sauce.
  3. In a wide pan, melt 80 g of butter over medium-low heat. Once the butter is fully melted and begins to foam slightly, add the grated truffle. Stir gently to combine, allowing the truffle to infuse the butter with its earthy aroma. Taste and add a pinch of fine sea salt if needed, but remember that Parmigiano-Reggiano will add saltiness later.
  4. Once the water is boiling, add 400 g of tagliolini to the pot. Stir occasionally to prevent sticking. Cook until the pasta is just shy of al dente; it should still have a slight firmness in the center when bitten.
  5. Before draining the pasta, reserve a cup of the starchy cooking water. This water will help bind the sauce to the pasta and create a silky texture.
  6. Drain the tagliolini and immediately transfer it to the pan with the truffle butter. Toss the pasta gently to coat it evenly with the sauce. If the mixture seems dry, add a small amount of the reserved pasta water, a few tablespoons at a time, until the sauce clings smoothly to the pasta.
  7. Off the heat, finely grate 60 g of Parmigiano-Reggiano over the pasta and toss again to combine. The cheese should melt into the sauce, adding creaminess and depth. Serve the Tagliolini al Tartufo hot, ensuring each plate has a generous coating of the truffle-infused sauce.
