Serves 4 to 6 Entree chicken, Poultry

Tavuk Sote

Tavuk Sote captures the essence of Turkish home cooking, where everyday meals transform into heartwarming experiences. Born from the kitchens of home cooks who know their ingredients by touch and taste, this dish makes its way to the table with generous use of fat and a keen eye on seasoning. It's a staple on many Turkish dinner tables, where the focus is on sharing both food and stories.

Expect the chicken to be tender and infused with the buttery richness that binds the flavors of fresh peppers, onions, and tomatoes. Each bite is a balance of savory and sweet, with a hint of warmth from black pepper, making it a comforting dish best enjoyed in good company.

Ingredients

  • 700 gchicken breast — strips
  • 1pepper
  • 1onion
  • 2tomatoes
  • 2 tbspbutter
  • to tastefine sea salt and black pepper

Method

  1. Start by cutting the 700 g chicken breast into bite-sized pieces. Pat them dry with a paper towel to ensure they brown properly. Season the chicken pieces generously with fine sea salt and freshly ground black pepper, ensuring each piece is well-coated. Heat a large skillet over medium-high heat and add 2 tablespoons of butter. Once the butter is melted and bubbling, add the chicken pieces in a single layer. Let them brown without moving for about 3-4 minutes until they develop a golden crust on one side.
  2. While the chicken is browning, prepare your vegetables. Slice 1 onion thinly and chop 1 pepper into strips. Dice 2 tomatoes into small cubes, ensuring to remove any excess seeds and liquid to prevent the dish from becoming watery.
  3. Once the chicken is browned on one side, flip the pieces over and add the sliced onion and pepper to the skillet. Stir everything together, allowing the vegetables to soften and the chicken to cook through. The onions should become translucent and the peppers slightly tender, which will take about 5-7 minutes.
  4. Add the diced tomatoes to the skillet, stirring them into the chicken and vegetable mixture. The tomatoes will release their juices, creating a light sauce. Let this mixture cook until the tomatoes have softened and the sauce has thickened slightly. If the sauce is too watery, let it simmer for a few more minutes to reduce.
  5. Taste the dish and adjust the seasoning with more salt and black pepper if needed. The sauce should have a balanced flavor, complementing the savory chicken and sweet vegetables.
  6. Once the sauce has reached your desired consistency and the flavors are balanced, remove the skillet from the heat. Serve the Tavuk Sote hot, ideally with fresh bread or rice to soak up the flavorful sauce, and enjoy this comforting Turkish home-cooked meal.
