Timballo di Maccheroni

Serves 4

Timballo di Maccheroni

Timballo di Maccheroni originates from the southern regions of Italy, where it's crafted for festive occasions and grand celebrations. Typically baked in ornate molds, this dish is a centerpiece at holiday tables, showcasing the Italian flair for transforming humble ingredients into something extraordinary. Its preparation is a cherished tradition, passed down through generations, each family adding its unique touch.

The timballo's allure lies in its layers, each offering a distinct texture and flavor. The maccheroni mingles with a rich, savory ragù, while the mozzarella and hard-boiled eggs provide creamy and tender contrasts. A golden crust of breadcrumbs and Parmigiano-Reggiano seals it all together, creating a symphony of flavors that is both comforting and indulgent.

Ingredients

  • 400 gmaccheroni
  • 500 gragù
  • 150 gmozzarella
  • 2hard-boiled eggs
  • 40 gbreadcrumbs
  • 40 gParmigiano-Reggiano
  • to tastefine sea salt

Method

  1. Fill a large pot with water, place it over high heat, and bring it to a rolling boil. Once boiling, add a generous amount of fine sea salt to the water. This will season the maccheroni as it cooks, enhancing the overall flavor of the dish.
  2. In a wide pan over medium heat, warm the 500 g of ragù. Stir occasionally, allowing it to heat evenly. Taste the ragù and adjust with fine sea salt if necessary to balance the flavors.
  3. Add the 400 g of maccheroni to the boiling water. Cook the pasta until it's just shy of al dente, meaning it should still have a slight firmness in the center. Reserve a cup of the starchy pasta water before draining.
  4. Preheat your oven to 180°C (350°F). In a large mixing bowl, combine the drained maccheroni with the warm ragù. If the mixture seems too thick, gradually add some reserved pasta water to loosen it, ensuring the pasta is well-coated but not soupy.
  5. Slice the 150 g of mozzarella and the 2 hard-boiled eggs into thin rounds. In a greased baking dish or party mold, layer half of the pasta mixture, followed by a layer of mozzarella and egg slices. Top with the remaining pasta mixture.
  6. Sprinkle 40 g of breadcrumbs evenly over the top of the pasta. This will create a golden, crispy crust as it bakes.
  7. Finish by grating 40 g of Parmigiano-Reggiano over the breadcrumbs. This will add a nutty, savory flavor to the crust.
  8. Place the dish in the preheated oven and bake until the top is golden brown and the cheese is bubbling, about 25-30 minutes. The aroma should be rich and inviting, signaling it's ready to serve.
