Ingredients

  • 700 gchicken thighs
  • 1onion
  • 2peppers
  • 2 tbspoil
  • to tastefine sea salt and black pepper

Method

  1. Start by patting 700 g of chicken thighs dry with paper towels to remove excess moisture. Season them generously with fine sea salt and black pepper to taste. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Once the oil shimmers, add the chicken thighs in a single layer. Brown the chicken on both sides until they develop a deep golden crust, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  2. While the chicken is browning, slice 1 onion and 2 peppers into thin strips. In the same skillet, add the sliced onion and peppers. Cook over medium heat, stirring occasionally, until the onions are translucent and the peppers are tender, about 5-7 minutes. The vegetables should be soft and aromatic, with a slight caramelization on the edges.
  3. Return the browned chicken thighs to the skillet, nestling them among the cooked vegetables. If there is any accumulated juice from the chicken, add it to the skillet as well. Stir everything together to combine the flavors.
  4. If the mixture appears too liquid, increase the heat slightly to allow the sauce to reduce. Stir occasionally and let it simmer until the sauce thickens slightly and clings to the chicken and vegetables. Taste the sauce and adjust the seasoning with more salt and black pepper if needed.
  5. Once the sauce has reached the desired consistency, turn off the heat. Transfer the chicken and vegetables to a serving platter. Garnish with fresh herbs of your choice, such as cilantro or Thai basil, to add a burst of freshness. Serve immediately, family-style, with steamed rice or crusty bread to soak up the flavorful sauce.
