Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin

Method

  1. Begin by preparing your ingredients: finely chop 1 onion and dice 2 tomatoes. Drain and rinse 400 g of chickpeas thoroughly under cold water. This will remove any excess starch and prepare them for cooking. Season the chickpeas with a pinch of fine sea salt and black pepper to taste, ensuring they are evenly coated.
  2. In a large, heavy-bottomed pot, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the chopped onion. Cook the onion slowly, stirring occasionally, until it becomes translucent and soft, releasing its sweet aroma. This should take about 5-7 minutes, but focus on the change in texture and aroma rather than time.
  3. Add 1 tsp of cumin to the softened onions, stirring well to coat them in the spice. Let the cumin cook with the onions for about a minute, until it releases a warm, earthy fragrance. This step is crucial for infusing the oil and onions with the cumin's flavor.
  4. Introduce the diced tomatoes to the pot, stirring them into the onion and cumin mixture. Allow the tomatoes to cook down, stirring occasionally, until they break down into a thick, chunky sauce. The tomatoes should lose their raw edge and become part of a cohesive base for the curry.
  5. Add the seasoned chickpeas to the pot, stirring them into the tomato-onion mixture. Cook everything together, allowing the chickpeas to absorb the flavors of the curry base. Stir occasionally, and continue cooking until the chickpeas are heated through and the mixture has thickened slightly, with a rich, cohesive texture.
  6. Taste the curry and adjust the seasoning with additional fine sea salt and black pepper as needed. The flavors should be balanced, with the cumin and tomatoes complementing the chickpeas. Serve the curry hot, ideally with rice or bread, and enjoy the communal spirit of Vietnamese home cooking.
