Ingredients

Method

  1. Rinse the 2 whole fish under cold running water to remove any scales or impurities. Pat them dry thoroughly with paper towels, ensuring there is no excess moisture, which helps achieve a crisp skin during grilling.
  2. In a small bowl, mix 2 tablespoons of olive oil with a generous pinch of fine sea salt and black pepper. Squeeze the juice of half a lemon into the mixture and stir well. This will serve as both a marinade and a basting sauce.
  3. Rub the oil mixture all over the fish, making sure to coat both the exterior and the cavity. Stuff the cavity of each fish with a handful of fresh herbs, such as cilantro or dill, for added aroma and flavor.
  4. Preheat a grill pan over medium-high heat until it is hot enough that a drop of water sizzles and evaporates on contact. Lightly oil the grill grates to prevent sticking.
  5. Place the fish on the grill pan, and let it cook undisturbed for about 4-5 minutes on each side. You will know the fish is ready to turn when the skin easily releases from the grill and has a golden-brown color.
  6. Once the fish is cooked through and the flesh is opaque and flakes easily with a fork, remove it from the grill. Squeeze the remaining lemon juice over the top for a fresh, tangy finish.
  7. Taste a small piece of the fish to check for seasoning. Adjust with additional fine sea salt and black pepper if needed. Serve immediately, garnished with extra herbs, and enjoy the dish family-style.
