Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold water until the water runs clear. Dice 1 onion and 2 tomatoes into small, even pieces. This ensures they cook evenly and blend well into the dish. Season the diced tomatoes with a pinch of fine sea salt and black pepper to enhance their natural sweetness.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft, about 5-7 minutes. This slow cooking allows the onion to release its sweetness and form a flavorful base for the dish.
  3. Add 1 tsp of cumin to the softened onions, stirring continuously for about 1 minute until the cumin becomes fragrant. This step releases the essential oils in the cumin, deepening the flavor of the dish.
  4. Stir in the seasoned tomatoes, allowing them to cook down with the onions and cumin for about 3-4 minutes. The tomatoes should start to break down and meld with the onions, creating a thick, aromatic base.
  5. Add the rinsed lentils to the pot, stirring to coat them in the onion-tomato mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let it cook until the lentils are tender but not mushy, which should take about 20-25 minutes. The lentils should hold their shape but be soft to the bite.
  6. Once the lentils are cooked, taste the dish and adjust with more fine sea salt and black pepper as needed. The flavors should be balanced, with the warmth of cumin and the sweetness of tomatoes complementing the earthy lentils.
  7. Serve the Vietnamese Lentil Bowl warm, ideally with a side of steamed rice or fresh herbs for a complete meal. This dish is perfect for sharing, embodying the communal spirit of Vietnamese home cooking.
