Vietnamese Shrimp Pan 2

Vietnamese Shrimp Pan 2 is a dish that finds its home in the heart of family kitchens, where recipes are passed down through generations, not by exact measurements but by instinct and feel. This version captures the essence of how Vietnamese home cooks prepare it, with generous use of salt and fat, reflecting a cooking style that values taste and comfort over precision.

The dish marries the sweetness of shrimp with the aromatic punch of garlic, all brightened by a squeeze of lemon. A hint of chili adds a gentle heat, while olive oil brings richness. It’s a dish designed for sharing, inviting everyone to gather around and savor its vibrant, warm flavors.

Ingredients

  • 600 gshrimp
  • 4 clovesgarlic
  • 80 mlolive oil
  • lemonjuiced
  • to tastechili
  • to tastefine sea salt

Method

  1. Start by cleaning the shrimp: peel and devein 600 g of shrimp, then rinse them under cold water. Pat them dry thoroughly with paper towels to ensure they sear properly in the pan.
  2. Peel and finely mince 4 cloves of garlic. In a large skillet, heat 80 ml of olive oil over medium heat. Once the oil shimmers, add the minced garlic, stirring constantly until it becomes fragrant and just begins to turn golden, about 1-2 minutes.
  3. Add the shrimp to the skillet in a single layer, ensuring they are not overcrowded. Cook the shrimp for about 1-2 minutes on one side until they turn pink and start to curl slightly.
  4. Flip the shrimp and continue cooking for another 1-2 minutes, or until they are just opaque throughout. Be careful not to overcook, as the shrimp should be tender and juicy.
  5. Squeeze the juice of one lemon over the shrimp, stirring to coat them evenly. Add chili to taste for a bit of heat, adjusting based on your preference.
  6. Taste the shrimp and sprinkle with fine sea salt to your liking, ensuring the flavors are balanced. Serve immediately, allowing everyone at the table to enjoy the dish while it's fresh and aromatic.
