Ingredients

  1. Start by ensuring the 600 g squid rings are thoroughly cleaned and patted dry with a paper towel. This step is crucial to remove any excess moisture, which helps the squid sear properly rather than steam in the pan.
  2. Peel and finely mince 4 cloves of garlic. In a large wok or a deep frying pan, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the minced garlic and stir-fry until it becomes golden and fragrant, being careful not to let it burn.
  3. Add the squid rings to the pan in a single layer. Stir them gently with a spatula to ensure even cooking. Cook the squid only until it turns opaque, which should take just a few minutes. The texture should be tender, not rubbery, indicating that it is perfectly cooked.
  4. Once the squid is cooked, squeeze the juice of one lemon over the dish, and add chili to taste for a hint of heat. Stir everything together to combine the flavors thoroughly.
