Ingredients

  • 800 gbeef cubes

Method

  1. Begin by seasoning 800 g of beef cubes with fine sea salt and black pepper to taste. Ensure each piece is evenly coated by gently massaging the seasoning into the meat. This step enhances the flavor and prepares the beef for browning.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, add the seasoned beef cubes in a single layer, ensuring not to overcrowd the pot. Allow each piece to brown deeply on all sides, turning occasionally with tongs. Look for a rich, dark brown crust on the beef, which indicates that the sugars in the meat have caramelized, adding depth of flavor.
  3. While the beef is browning, peel and slice 2 carrots into thin rounds and finely chop 1 onion. Once the beef is browned, remove it from the pot and set aside. Add the chopped onion to the same pot, stirring to pick up any browned bits from the bottom. Cook until the onion becomes translucent and slightly golden, releasing its sweet aroma.
  4. Add the sliced carrots to the pot, stirring them with the onions for about 2 minutes until they start to soften slightly. This step allows the carrots to absorb the flavors from the pot, enhancing their natural sweetness.
  5. Return the browned beef cubes to the pot, nestling them among the vegetables. Pour in 500 ml of water, ensuring the beef is just covered.
