The skewers are a staple across West Africa, known for their rich, savory taste. With beef cubes marinated in onion, oil, and cumin, these skewers are seasoned to taste with fine sea salt and black pepper, offering a deliciously authentic experience meant for sharing.

Ingredients

  • 800 gbeef cubes
  • 1onion

  • 1 tspcumin

Method

  1. Begin by seasoning 800 g of beef cubes with a generous pinch of fine sea salt and 1 tsp of cumin. Toss the beef cubes thoroughly to ensure each piece is evenly coated with the spices. This step is crucial for infusing the meat with flavor before cooking.
  2. Peel and finely chop 1 onion. Heat 2 tbsp of oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 2 to 3 minutes.
  3. Add the seasoned beef cubes to the skillet, spreading them out in a single layer. Allow the beef to brown on one side without stirring for about 3 to 4 minutes, or until a deep, rich color develops. Turn the cubes to brown all sides evenly, ensuring a crust forms on the surface of each piece.
  4. Once the beef is well-browned, you have the option to either braise or grill the skewers. For braising, add a small amount of water to the skillet, cover, and reduce the heat to low. Cook until the beef is tender and easily pierced with a fork, stirring occasionally to prevent sticking.
  5. If grilling, thread the beef cubes onto skewers, leaving a small gap between each piece for even cooking. Place the skewers on a preheated grill over medium heat. Grill, turning occasionally, until the beef is cooked through and tender, with a slight char on the edges.
  6. After cooking, taste a piece of beef and adjust the seasoning with additional fine sea salt and black pepper if needed. Serve the skewers hot, accompanied by rice, bread, or a fresh salad for a complete meal.
