Ingredients

  • 800 gbeef cubes

Method

  1. Begin by placing the 800 g of beef cubes in a large mixing bowl. Season the meat generously with fine sea salt and freshly ground black pepper, ensuring each piece is well-coated. Add 1 tsp of cumin to the bowl, using your hands to mix and massage the spices into the meat, which helps to enhance the flavors and tenderize the beef.
  2. Peel and finely chop 1 onion, then set it aside. Heat 2 tbsp of oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 2 to 3 minutes.
  3. Add the seasoned beef cubes to the skillet in a single layer, ensuring they are not overcrowded. Allow the beef to brown on all sides, turning occasionally. Each piece should develop a deep, rich color, which indicates the Maillard reaction is occurring, enhancing the flavor of the meat.
  4. Once the beef is evenly browned, you can choose to either braise or grill the skewers. If braising, add a small amount of water to the skillet, cover, and reduce the heat to low, simmering until the beef is tender. If grilling, thread the beef onto skewers and place them on a preheated grill, cooking until the meat is tender and slightly charred at the edges.
