Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your ingredients. Dice 1 onion and chop 2 tomatoes into small pieces. Rinse and drain 400 g of chickpeas thoroughly. This preparation ensures even cooking and flavor distribution.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Once the oil shimmers, add the diced onion. Stir occasionally until the onion becomes translucent and soft, releasing a sweet aroma, which should take about 5-7 minutes.
  3. Add the chopped tomatoes to the pot with the softened onions. Stir the mixture gently, allowing the tomatoes to break down and meld with the onions. This should result in a thick, fragrant base.
  4. Sprinkle 1 tsp of cumin over the tomato-onion mixture, stirring well to combine. The cumin should release a warm, earthy scent as it toasts lightly in the oil, enhancing the depth of flavor.
  5. Introduce the drained chickpeas to the pot, stirring to coat them in the aromatic base. Allow them to simmer gently, absorbing the flavors and softening slightly. The chickpeas should have a tender bite without being mushy.
  6. Taste the curry and season with fine sea salt and black pepper to your preference. The seasoning should enhance the natural flavors without overpowering them.
