Ingredients

Method

  1. Begin by preparing your ingredients. Peel and chop the 2 eggplants into bite-sized cubes. Dice the 2 tomatoes and finely chop the onion. Mince the 3 cloves of garlic. Season the eggplant cubes with a generous pinch of fine sea salt and black pepper, ensuring each piece is evenly coated. This will help draw out excess moisture and enhance the flavor.
  2. In a large, heavy-bottomed pot, heat 80 ml of olive oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, releasing its sweet aroma. This should take about 5-7 minutes. Add the minced garlic and continue to cook until fragrant, about 1 minute.
  3. Add the seasoned eggplant cubes to the pot. Stir well to coat them in the onion and garlic mixture. Cook the eggplant, stirring occasionally, until they begin to soften and take on a golden color. The eggplant should start to absorb the oil and become tender, which is a sign they are cooking well.
  4. Add the diced tomatoes to the pot. Stir to combine, allowing the tomatoes to release their juices. Continue to cook over medium heat, stirring occasionally, until the tomatoes break down and meld into the mixture, creating a thick, stew-like consistency. The eggplant should be fully tender and soft, easily pierced with a fork.
  5. Taste the stew and adjust the seasoning with fine sea salt and black pepper as needed. The flavors should be balanced, with a rich, savory taste from the eggplant and a slight sweetness from the tomatoes. Once satisfied with the taste, remove the pot from the heat and serve the stew warm, perfect for sharing around the table.
