Ingredients

  • 800 glamb cubes
  • 2onions
  • 2tomatoes
  • 2 tbspoil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Begin by seasoning the 800 g lamb cubes generously with fine sea salt and black pepper. Add 1 tsp paprika, ensuring each piece is evenly coated. This step enhances the flavor of the meat and prepares it for browning.
  2. In a large, heavy-bottomed pot or Dutch oven, heat 2 tbsp oil over medium-high heat. Once the oil shimmers, add the lamb cubes in a single layer, being careful not to overcrowd the pot. Brown the lamb on all sides, turning occasionally, until each piece has a deep, rich color. This step locks in flavor and creates a flavorful base for the stew.
  3. While the lamb is browning, finely chop 2 onions and 2 tomatoes. Once the lamb is browned, remove it from the pot and set it aside. Add the chopped onions to the same pot, using the residual oil and lamb drippings to cook them until they are soft and translucent, which should take a few minutes.
  4. Add the chopped tomatoes to the onions in the pot. Stir well, allowing the tomatoes to break down and meld with the onions, forming a thick, aromatic base. This mixture should become fragrant and slightly caramelized, which will add depth to the stew.
  5. Return the browned lamb cubes to the pot, stirring them into the onion and tomato mixture. Ensure the lamb is well-coated with the sauce. Cover the pot with a lid, reduce the heat to low, and allow the stew to braise gently. Cook until the lamb is tender, which is indicated by the meat easily pulling apart with a fork and the sauce thickening around it.
  6. Taste the stew and adjust the seasoning with additional salt and black pepper if necessary. The flavors should be well-balanced and the stew should have a rich, savory taste. Serve the West African Lamb Stew 2 hot, accompanied by rice, bread, or a fresh salad, ready to be shared at the table.
