Ingredients

  • 800 glamb cubes
  • 2onions
  • 2tomatoes
  • 2 tbspoil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Begin by generously seasoning 800 g of lamb cubes with fine sea salt and freshly ground black pepper. Sprinkle 1 teaspoon of paprika over the meat, ensuring each piece is evenly coated. This step enhances the flavor of the lamb, setting the foundation for the stew.
  2. Heat 2 tablespoons of oil in a large, heavy-bottomed pot over medium-high heat. Once the oil is shimmering, add the seasoned lamb cubes in a single layer, being careful not to overcrowd the pot. Brown the lamb on all sides until each piece develops a deep, rich color. This browning process is crucial for building flavor in the stew.
  3. While the lamb is browning, finely chop 2 onions and 2 tomatoes. Once the lamb is browned, remove it from the pot and set aside. Add the chopped onions to the same pot, using the residual oil and lamb drippings to sauté them. Cook the onions until they become translucent and start to caramelize, which should take on a slightly golden hue.
  4. Add the chopped tomatoes to the pot with the onions, stirring to combine. Cook the mixture until the tomatoes break down and meld with the onions, creating a thick, aromatic base. This step is important for developing the stew's rich, savory flavor.
  5. Return the browned lamb cubes to the pot, stirring them into the onion and tomato mixture. Add enough water to just cover the lamb, then bring the mixture to a gentle simmer. Cover the pot with a lid and reduce the heat to low, allowing the stew to braise slowly.
  6. Cook the stew until the lamb is tender and easily pierced with a fork. This can be judged by the meat's texture, which should be soft and succulent, and the sauce, which should have thickened slightly and taken on a deep, rich color.
  7. Once the lamb is tender, taste the stew and adjust the seasoning with more salt and black pepper if necessary. Serve the West African Lamb Stew hot, accompanied by rice, bread, or a fresh salad, inviting everyone to share in the hearty meal.
