The dish offers a hearty, savory embrace, with lentils providing a nutty base that absorbs the aromatic cumin and the sweetness of tomatoes. The onions infuse a gentle sweetness, while the generous oil creates a rich mouthfeel. Salt and black pepper are adjusted by instinct, making each bowl unique to its maker, yet universally satisfying.

Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by rinsing 300 g of brown lentils under cold water in a fine mesh sieve until the water runs clear. This removes excess starch and prevents them from becoming too mushy when cooked. Set the lentils aside to drain while you prepare the other ingredients.
  2. Peel and finely chop 1 onion. Dice 2 tomatoes into small cubes. This will form the aromatic base of your dish, infusing the lentils with flavor as they cook.
  3. In a large pot or deep skillet, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the chopped onion. Cook, stirring occasionally, until the onion becomes translucent and soft, releasing a sweet aroma. This should take about 5-7 minutes.
  4. Add the diced tomatoes to the pot, stirring them into the softened onions. Cook until the tomatoes break down and meld with the onions, forming a thick, fragrant base. This will take another 5-7 minutes, and you'll notice the mixture becoming slightly saucy.
  5. Stir in 1 tsp of cumin, allowing it to toast for a minute until its warm, earthy scent is released. This step enhances the flavor profile, giving the dish its characteristic West African warmth.
  6. Add the rinsed lentils to the pot, stirring them into the tomato-onion mixture until well coated. Pour in enough water to cover the lentils by about an inch. This ensures they cook evenly and absorb the flavors of the base.
  7. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and let the lentils cook slowly, stirring occasionally, until they are tender but still hold their shape. This will take around 25-30 minutes, and you should see the lentils plump up and the sauce thicken.
  8. Once the lentils are cooked to your desired tenderness, season the dish with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed. The dish should be savory with a hint of spice from the cumin.
  9. Serve the West African Lentil Bowl warm, ideally in a communal dish for sharing. The lentils should be tender and flavorful, with a rich, aromatic sauce that clings to each grain.
