The meatballs, tender and savory, are infused with the warmth of sautéed onions and the subtle tang of ripe tomatoes. A hint of breadcrumbs binds them together, while an egg lends them a rich texture. Fine sea salt and black pepper are added by feel, ensuring each bite is perfectly seasoned. Ingredients

  • 700 gground beef
  • 1onion
  • 1egg
  • 2 tbspbreadcrumbs
  • 2tomatoes
  • to tastefine sea salt and black pepper

Method

  1. Start by finely chopping 1 onion and set it aside. In a large mixing bowl, combine 700 g ground beef, the chopped onion, 1 egg, 2 tbsp breadcrumbs, and a generous pinch of fine sea salt and black pepper. Mix the ingredients thoroughly with your hands until they are well combined and the mixture feels cohesive.
  2. Shape the meat mixture into small, even-sized meatballs, about the size of a golf ball. This ensures they cook evenly. You should have around 15-20 meatballs. Set them aside on a plate.
  3. Heat a large, heavy-bottomed pot or deep skillet over medium-high heat and add enough oil to generously coat the bottom. Once the oil is shimmering, add the meatballs in batches, ensuring not to overcrowd the pan. Brown the meatballs on all sides until they develop a deep, rich color, which should take about 3-4 minutes per side. Remove them from the pan and set aside.
  4. While the meatballs are browning, dice 2 tomatoes. Once all the meatballs are browned and removed from the pan, add the diced tomatoes to the same pot. Use a wooden spoon to scrape up any browned bits from the bottom of the pan, as these add flavor to the dish.
  5. Return the meatballs to the pot with the tomatoes. Reduce the heat to low, cover the pot, and let the meatballs braise gently in their own juices and the tomato mixture. Stir occasionally to ensure even cooking. The meatballs are done when they are firm to the touch and the tomatoes have broken down into a thick sauce, enveloping the meatballs.
  6. Taste the sauce and adjust the seasoning with more fine sea salt and black pepper if needed. The sauce should be rich and flavorful, complementing the meatballs perfectly. Serve the West African Meatball Pot with rice, bread, or a fresh salad for a complete meal.
