Ingredients

  • 10pastry sheets
  • 200 gcheese

Method

  1. Begin by taking 100 g of butter out of the refrigerator and allowing it to come to room temperature. This will make it easier to work with and ensure even distribution when assembling the pie. At the same time, bring any dairy or eggs you might be using for the dish to room temperature as well, as this helps them incorporate smoothly into the mixture.
  2. Melt the 100 g of butter in a small saucepan over low heat. Stir occasionally to prevent it from browning. Once fully melted, remove from heat and let it cool slightly. This melted butter will be used to brush the pastry sheets, adding richness and helping them crisp up during baking.
  3. Lay out the first of your 10 pastry sheets on a clean, flat surface. Brush it generously with the melted butter using a pastry brush, ensuring the entire surface is covered. Sprinkle a small amount of your selected herbs over the buttered sheet for added flavor.
  4. Repeat the process with the remaining pastry sheets, stacking each one on top of the last after brushing with butter and sprinkling with herbs. This layering will create a flaky, flavorful base for your pie. Once all sheets are stacked, press them gently to ensure they adhere to one another.
  5. Grate 200 g of cheese and spread it evenly over the top layer of the pastry. The cheese will melt during baking, creating a creamy, savory layer that complements the crisp pastry.
  6. Preheat your oven to 350°F (175°C). Transfer the layered pastry and cheese to a baking dish, ensuring it fits snugly. Bake in the preheated oven until the pastry is golden brown and the cheese is bubbly and slightly browned, indicating that the layers are cooked through.
  7. Once baked, remove the pie from the oven and let it cool for a few minutes. This allows the cheese to set slightly, making it easier to slice. Serve warm, allowing the flavors to meld and the layers to be fully appreciated.
