Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Start by bringing 100 g of butter to room temperature. This will ensure it mixes smoothly with other ingredients. Meanwhile, grate 200 g of cheese and set aside. This will be used in the layers of the pie.
  2. In a saucepan over low heat, melt the butter gently until it turns a pale golden color and releases a nutty aroma. This process clarifies the butter, enhancing the flavor of the pie. Once melted, remove from heat and let it cool slightly.
  3. Lay out one of the 10 pastry sheets on a clean surface. Brush it lightly with the melted butter using a pastry brush, ensuring even coverage. Sprinkle a small portion of the grated cheese and a pinch of herbs over the buttered pastry sheet. This layering will create a rich, flavorful base.
  4. Repeat the layering process with the remaining pastry sheets, butter, cheese, and herbs, stacking each sheet on top of the last. Press down gently after each layer to ensure they adhere well. This will create a cohesive pie structure.
  5. Preheat your oven to 180°C (350°F). Transfer the layered pastry stack to a baking dish, ensuring it fits snugly. This will help the pie hold its shape during baking.
  6. Place the baking dish in the preheated oven. Bake until the top layer of pastry turns a deep golden brown and the cheese begins to bubble through the layers, indicating that the pie is set. This should create a crispy top with a soft, cheesy interior.
  7. Remove the pie from the oven and allow it to cool for a few minutes. This will make it easier to slice and serve. The pie should be warm but not too hot, allowing the flavors to meld together perfectly.
  8. Slice the pie into portions and serve while still warm. The layers should be distinct, with the cheese and herbs visible in between the pastry sheets, offering a delightful texture and taste.
