Ingredients

  • 250 gflour
  • 150 gnuts — chopped
  • 100 gbutter
  • 100 gsugar
  • 1egg

Method

  1. Start by bringing the butter (100 g) to room temperature. This will make it easier to cream with the sugar and incorporate into the dough. Leave the egg out to reach room temperature as well, which helps it blend smoothly into the mixture.
  2. In a large mixing bowl, combine the room-temperature butter with 100 g of sugar. Use a wooden spoon or an electric mixer on low speed to cream them together until the mixture is light and fluffy. This process helps to incorporate air, giving the pastry a tender texture.
  3. Gradually add the room-temperature egg to the creamed butter and sugar mixture. Mix until fully combined, ensuring the egg is evenly distributed. This step is crucial for binding the ingredients together.
  4. In a separate bowl, sift 250 g of flour to remove any lumps. Slowly incorporate the flour into the wet mixture, stirring gently until a dough forms. The dough should be smooth and slightly sticky, but not overly wet.
  5. Chop 150 g of nuts into small, even pieces. Fold the nuts into the dough, ensuring they are evenly distributed. The nuts add texture and flavor, characteristic of Caribbean pastries.
  6. Lightly flour a clean surface and roll out the dough to about 1/4 inch thickness. Use a pastry cutter or knife to cut the dough into desired shapes, such as squares or circles. Transfer the cut pieces to a baking sheet lined with parchment paper.
  7. Preheat your oven to 180°C (350°F). Place the baking sheet in the oven and bake until the pastries are golden brown and firm to the touch, about 15-20 minutes. The edges should be slightly darker, indicating they are fully cooked.
  8. Once baked, remove the pastries from the oven and let them cool on a wire rack. If desired, sprinkle a little extra sugar on top while they are still warm for added sweetness. Serve the pastries at room temperature, perfect for sharing around the table.
