Caribbean Sweet Syrup Cake 2 is a cherished dessert found across the Caribbean, known for its rich, buttery texture and sweet, syrup-soaked finish. This cake is a staple at home gatherings, where it's prepared with a generous hand of salt and butter, embodying the warmth and hospitality of Caribbean family meals.

The cake is a delightful blend of simple ingredients: flour, sugar, butter, and eggs, all coming together to create a moist, flavorful treat. Once baked, it's soaked in syrup, enhancing its sweetness and making it a perfect companion for any shared table.

Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Start by bringing the 100 g of butter to room temperature. This will ensure it creams well with the sugar, creating a light and airy texture for your cake. Also, take the 3 eggs out of the refrigerator to bring them to room temperature, which helps them incorporate more smoothly into the batter.
  2. In a mixing bowl, cream together the softened butter and 150 g of sugar. Use a hand mixer or a wooden spoon to beat them until the mixture is pale and fluffy. This step is crucial as it incorporates air, which will help the cake rise and become tender.
  3. Add the 3 room-temperature eggs to the butter and sugar mixture, one at a time. Beat well after each addition until the eggs are fully incorporated. This gradual addition helps maintain the emulsion and prevents the batter from curdling.
  4. Sift 200 g of flour into the bowl, folding it gently into the wet ingredients. Use a spatula or a large spoon for this step, being careful not to overmix. The goal is to combine the ingredients just until the flour is no longer visible, preserving the airiness of the batter.
  5. Preheat your oven to 180°C (350°F). Grease and line a cake pan with parchment paper. Pour the batter into the prepared pan, smoothing the top with a spatula. This ensures even baking and a smooth top for the cake.
  6. Place the cake in the preheated oven and bake until the top is golden brown and a skewer inserted into the center comes out clean. The cake should have a slight spring when gently pressed in the center, indicating it's fully baked.
  7. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. This cooling process helps the cake set and makes it easier to handle.
  8. Finish by generously drizzling the cake with syrup to soak. Allow the syrup to absorb fully into the cake, enhancing its moisture and flavor. Serve the cake at room temperature, where its sweet, syrupy richness can be fully appreciated.
