Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by taking 100 g of butter out of the refrigerator to soften at room temperature. This will make it easier to blend with other ingredients later. Ensure the butter is soft enough to leave an indentation when pressed lightly with a finger.
  2. Prepare the cheese by grating 200 g into a bowl. This will help it melt evenly when layered between the pastry sheets. Set it aside for use in the layering process.
  3. Lay out the 10 pastry sheets on a clean surface. Melt the softened butter in a small saucepan over low heat until it becomes a clear liquid. Use a pastry brush to lightly coat each pastry sheet with the melted butter, ensuring even coverage to prevent the sheets from drying out during baking.
  4. Sprinkle a generous amount of the grated cheese evenly over the first buttered pastry sheet. Add a pinch of herbs to enhance the flavor. Carefully place another buttered pastry sheet on top, pressing gently to adhere the layers together. Repeat this process until all pastry sheets, cheese, and herbs are used, forming a stack.
  5. Preheat your oven to 180°C (350°F). Transfer the layered pastry stack onto a baking tray lined with parchment paper. Bake in the preheated oven until the top layer turns golden brown and the cheese has melted completely, indicating the layers have fused together. This should result in a crispy top with a soft, cheesy interior.
  6. Once baked, remove the pie from the oven and let it cool slightly on a wire rack. This allows the layers to set and makes it easier to cut without collapsing. Serve warm, allowing the flavors to meld and the texture to be enjoyed at its best.
