Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by taking 100 g of butter and 3 eggs out of the refrigerator. Allow them to come to room temperature. This ensures that the butter is soft enough to mix smoothly and the eggs incorporate evenly into the batter, resulting in a uniform texture.
  2. In a large mixing bowl, combine 200 g of flour and 150 g of sugar. Whisk these dry ingredients together until they are well blended, ensuring there are no lumps of sugar. This step helps distribute the sugar evenly throughout the cake.
  3. Add the softened butter to the dry mixture. Using a spatula or an electric mixer on low speed, cream the butter into the flour and sugar until the mixture is crumbly and resembles coarse sand. This step is crucial for creating a tender crumb in the final cake.
  4. Crack the room temperature eggs into a separate bowl and beat them lightly. Gradually add the eggs to the flour mixture, stirring continuously. The batter should become smooth and slightly thick, with no visible streaks of flour.
  5. Transfer the batter into a greased baking pan, spreading it evenly with a spatula. Place the pan in a preheated oven at 180°C (350°F). Bake until the cake is golden brown on top and a toothpick inserted into the center comes out clean, indicating the cake is fully cooked.
  6. While the cake is baking, prepare the syrup for soaking. If using a pre-made syrup, warm it gently in a small saucepan over low heat until it is just warm to the touch. This will help it absorb into the cake more effectively.
  7. Once the cake is baked, remove it from the oven and allow it to cool slightly in the pan. While still warm, pour the warm syrup evenly over the top of the cake, allowing it to soak in. The cake should absorb the syrup without becoming soggy, enhancing its sweetness and moisture.
  8. Let the cake cool completely before serving. This allows the syrup to fully integrate, resulting in a moist and flavorful cake. Serve at room temperature, ideally with a pot of tea, to enjoy the cake's delicate sweetness and rich texture.
