  1. Start by bringing the butter (100 g) to room temperature. This will make it easier to incorporate into the dough. Leave the egg out as well, so it reaches room temperature, ensuring it mixes smoothly with the other ingredients.
  2. In a large mixing bowl, combine the flour (300 g) with a pinch of salt. Add the softened butter and use your fingertips to rub it into the flour until the mixture resembles coarse breadcrumbs. This step is crucial for creating a flaky texture in the pastry.
  3. Grate the cheese (200 g) and add it to the flour and butter mixture. Mix gently with your hands or a spatula until the cheese is evenly distributed throughout the flour mixture. The cheese will add flavor and moisture to the dough.
  4. Make a well in the center of the mixture and crack the room temperature egg into it. Using a fork or your hands, gradually incorporate the egg into the flour mixture until a dough begins to form. Knead the dough lightly in the bowl until it comes together into a smooth ball.
  5. Transfer the dough onto a lightly floured surface and roll it out to about 1/4 inch thickness. The dough should be smooth and pliable, not sticky. If it's too sticky, sprinkle a little more flour and knead gently.
  6. Cut the rolled dough into desired shapes, such as circles or squares, using a cookie cutter or a knife. Place the cut pieces onto a baking sheet lined with parchment paper, leaving a bit of space between each piece.
  7. Preheat your oven to 180°C (350°F). Bake the pastries in the preheated oven until they are golden brown and have a crisp texture, which should take about 15-20 minutes. The cheese will melt and create a delicious aroma, signaling that the pastries are ready.
