Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by taking the 100 g of butter out of the refrigerator and allowing it to come to room temperature. This will make it easier to spread later on. Also, bring the cheese to room temperature so it softens slightly, which will help it melt evenly during baking.
  2. Preheat your oven to 180°C (350°F) to ensure it's ready for baking. Meanwhile, prepare a clean, flat surface for assembling the pie. Lay out the 10 pastry sheets and cover them with a damp cloth to prevent them from drying out.
  3. Melt the room temperature butter in a small saucepan over low heat until fully liquid. Keep a close eye on it to ensure it doesn't brown, as this could alter the flavor. Once melted, remove from heat and set aside.
  4. Take one pastry sheet and lay it flat on your prepared surface. Brush it generously with the melted butter using a pastry brush, ensuring the entire surface is covered. Sprinkle a thin layer of the room temperature cheese over the buttered pastry, then add a small pinch of herbs for flavor.
  5. Carefully place another pastry sheet on top of the first, aligning the edges. Repeat the process of brushing with butter, sprinkling cheese, and adding herbs. Continue layering in this manner until all 10 pastry sheets are used, finishing with a final layer of butter and cheese on top.
  6. Transfer the layered pastry stack to a baking dish that fits the size of your pastry sheets. Place it in the preheated oven and bake until the top is golden brown and the cheese has melted completely, which should give off a rich, savory aroma.
