Colombian Layered Pie

Colombian Layered Pie is a comforting dish often found on home tables across Colombia. It features layers of pastry sheets, generously buttered, and filled with cheese and herbs. This version captures the essence of a family recipe, with salt and fat used liberally, creating a rich and satisfying flavor.

This pie is a staple in Colombian homes, where it's prepared with a focus on taste and sharing. The combination of buttery pastry, melted cheese, and aromatic herbs offers a delicious experience that brings people together around the table.

Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by taking 100 g of butter out of the refrigerator to soften at room temperature. This will make it easier to spread later. While waiting, grate 200 g of cheese and set aside. This ensures all ingredients are ready when you start assembling the pie.
  2. Lay out your 10 pastry sheets on a clean surface. Melt the softened butter in a small saucepan over low heat until fully liquid, but not bubbling. Use a brush to lightly coat each pastry sheet with the melted butter, ensuring even coverage to prevent them from drying out during baking.
  3. Preheat your oven to 180°C (350°F). Take a baking dish large enough to fit the pastry sheets without folding them. Begin layering by placing one buttered pastry sheet at the bottom of the dish. Sprinkle a portion of the grated cheese evenly over the sheet, then add a pinch of herbs for flavor. Repeat this process, layering pastry, cheese, and herbs, until all sheets are used.
  4. Once all layers are assembled, pour any remaining melted butter over the top layer to ensure a golden finish. Place the baking dish in the preheated oven. Bake until the top layer of pastry is golden brown and the cheese is melted and bubbling, indicating the layers have set together, about 25 to 30 minutes.
  5. Remove the pie from the oven and let it cool slightly on a wire rack. This resting period allows the layers to firm up, making it easier to slice and serve. Serve the Colombian Layered Pie warm, allowing the flavors to meld together beautifully, perfect for sharing at the table.
