Croquette Curry Pan

Croquette Curry Pan is a beloved staple in Japanese bakeries, capturing the essence of comfort and nostalgia in every bite. This home-cooked version brings the bakery experience to your kitchen, allowing you to recreate the golden, crispy delight often enjoyed as a midday snack or a quick lunch. The recipe reflects the way a Japanese family cook prepares it, with a focus on flavor and texture.

Biting into a freshly made Croquette Curry Pan should be a joyful collision of crispy panko crust and warm, savory curry filling. The rich aroma of Japanese curry mingles with the satisfying crunch of the fried bun, creating a harmonious balance that delights the senses. Generously seasoned with fine sea salt, this dish invites you to savor each mouthful.

Ingredients

  • 4curry buns
  • 200 gJapanese curry filling
  • for fryingpanko
  • 1egg
  • for fryingoil
  • to tastefine sea salt

Method

  1. Crack 1 egg into a small bowl and beat it lightly with a fork until the yolk and white are fully combined. Set aside. This will be used to help the panko adhere to the curry buns.
  2. Take the 4 curry buns and gently dip each one into the beaten egg, ensuring all sides are coated. This step is crucial as it helps the panko stick to the buns, creating a crispy exterior when fried.
  3. Spread a generous amount of panko on a plate. Roll each egg-coated curry bun in the panko, pressing lightly to ensure an even coating. The buns should be completely covered in panko, with no bare spots visible.
  4. In a deep frying pan, pour enough oil to submerge the buns halfway and heat it over medium-high heat. Test the oil temperature by dropping a small piece of panko into the oil; it should sizzle and rise to the surface immediately.
  5. Carefully place the panko-coated curry buns into the hot oil. Fry them until the panko turns a golden brown, turning occasionally to ensure even cooking on all sides. The buns should feel firm to the touch and have a crispy texture.
  6. Once the buns are golden brown, remove them from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil. Sprinkle fine sea salt over the buns while they are still hot, adjusting to taste.
  7. Serve the Croquette Curry Pan warm, ideally while the exterior is still crisp and the curry filling inside is hot and flavorful. This dish is best enjoyed fresh, with the contrast between the crunchy outside and the savory, soft filling inside.
