Eastern European Sweet Syrup Cake 2 is a beloved staple in many households, a dessert that brings comfort and sweetness to everyday family meals. It's prepared without ceremony yet with a touch of care that speaks to its place in home cooking traditions. The cake is moist and rich, its crumb soft and tender, thanks to the generous use of butter. Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Start by bringing 100 g of butter to room temperature. This will ensure it mixes smoothly with the other ingredients, creating a uniform batter. At the same time, take 3 eggs out of the refrigerator and allow them to reach room temperature as well. This helps them incorporate better into the batter, resulting in a lighter cake.
  2. In a large mixing bowl, cream together the softened butter and 150 g of sugar. Use a wooden spoon or an electric mixer to beat them until the mixture is pale and fluffy. This step is crucial as it incorporates air into the batter, which will help the cake rise.
  3. Add the room temperature eggs one at a time into the butter-sugar mixture. Beat well after each addition until fully combined. This gradual incorporation prevents the batter from curdling and ensures a smooth texture.
  4. Sift 200 g of flour into the bowl with the wet ingredients. Gently fold the flour into the mixture using a spatula. Be careful not to overmix, as this can develop the gluten in the flour, resulting in a dense cake.
  5. Preheat your oven to 180°C (350°F). Grease and line a cake pan with parchment paper. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven until the cake is golden brown and a skewer inserted into the center comes out clean, indicating it is fully cooked.
  6. Once baked, remove the cake from the oven and allow it to cool slightly in the pan. While it is still warm, pour the syrup generously over the cake, allowing it to soak in. The syrup should be absorbed fully, leaving the cake moist and flavorful.
  7. Let the cake cool completely before serving. This allows the syrup to penetrate fully and the flavors to meld. Serve the cake at room temperature, ideally with a hot cup of tea, for a true Eastern European experience.
