Filipino Layered Pie

Filipino Layered Pie is a beloved dish found on many Filipino home tables, crafted with a generous hand for salt and fat. This version captures the essence of home cooking, where the pie is assembled with layers of pastry sheets, cheese, and butter, creating a rich and satisfying meal meant for sharing.

The pie is a comforting blend of textures and flavors, with the buttery pastry and melted cheese harmonizing beautifully. Herbs add a fresh note, elevating the dish beyond its simple components. It's a true reflection of how Filipino families enjoy food together, with each bite offering a taste of home.

Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by bringing 100 g of butter to room temperature. This will make it easier to spread and incorporate into the layers of the pie. If it's too cold, it won't blend well with the pastry sheets, and if it's too warm, it might make the pastry soggy.
  2. Preheat your oven to 180°C (350°F). As the oven heats, prepare the pastry sheets by laying them out on a clean surface. Melt the butter gently in a small saucepan over low heat, ensuring it doesn't brown, as this could alter the flavor of the pie.
  3. Once the butter is melted, take a pastry brush and lightly coat one side of a pastry sheet with the melted butter. Sprinkle a small amount of finely chopped herbs over the buttered side, then place another pastry sheet on top, pressing gently to adhere. Repeat this process until all 10 pastry sheets are layered, buttered, and herbed.
  4. Grate 200 g of cheese and evenly distribute it over the top layer of the pastry stack. The cheese should cover the surface but not be piled too thickly, as it needs to melt and bind the layers without overwhelming them.
  5. Carefully transfer the layered pastry to a baking dish. Use a dish that is slightly larger than the pastry stack to allow for even cooking. Place the dish in the preheated oven and bake until the pastry is golden brown and the cheese is bubbly and slightly crisp on top, which should take about 20-25 minutes.
  6. Remove the pie from the oven and let it cool slightly in the dish. This resting period allows the layers to set and makes it easier to slice without falling apart.
  7. Finish by slicing the pie into squares or rectangles, depending on your preference. Serve warm, allowing the flavors of the cheese and herbs to shine through, and enjoy the flaky, buttery layers that characterize this Filipino Layered Pie.
