Ingredients

  • 300 gflour
  • 200 gcheese
  • 100 gbutter
  • 1egg

Method

  1. Begin by taking the 100 g of butter out of the refrigerator and letting it soften at room temperature. This will make it easier to incorporate into the dough later. Crack the egg into a small bowl and allow it to come to room temperature as well, which helps in achieving a smoother dough consistency.
  2. In a large mixing bowl, combine 300 g of flour with a pinch of salt. Add the softened butter to the flour and use your fingertips to rub the butter into the flour until the mixture resembles coarse breadcrumbs. This step ensures that the butter is evenly distributed, creating a flaky texture in the pastry.
  3. Grate 200 g of cheese and add it to the flour and butter mixture. Mix well to ensure the cheese is evenly incorporated throughout the dough. The cheese will add a rich flavor and a slight creaminess to the pastry.
  4. Make a well in the center of the mixture and pour in the room-temperature egg. Use a fork to gradually incorporate the flour mixture into the egg, forming a dough. If the dough feels too dry, add a tablespoon of cold water at a time until it comes together. The dough should be soft but not sticky.
  5. Turn the dough onto a lightly floured surface and knead it gently for a minute or two until it becomes smooth and elastic. Be careful not to over-knead, as this can make the pastry tough. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to rest and firm up.
  6. Preheat your oven to 180°C (350°F). Roll out the chilled dough on a floured surface to about 5 mm thickness. Cut the dough into desired shapes using a pastry cutter or knife. Place the cut pieces onto a baking sheet lined with parchment paper.
  7. Bake the pastries in the preheated oven until they are golden brown and the cheese has melted, about 15-20 minutes. The pastries should be firm to the touch and have a pleasant cheesy aroma. Remove from the oven and let them cool slightly on a wire rack.
