Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by bringing 100 g of butter to room temperature. This will make it easier to spread evenly on the pastry sheets. Also, grate 200 g of cheese and set aside, allowing it to come to room temperature, which will help it melt evenly during baking.
  2. Take 10 pastry sheets and lay them out on a clean, dry surface. Brush each sheet generously with the softened butter, ensuring that the entire surface is covered. This will create a rich, flaky texture in the final pie.
  3. Once all the pastry sheets are buttered, layer them one on top of the other in a baking dish. Use a dish that is slightly larger than the sheets to allow for any expansion during baking. Sprinkle a portion of the grated cheese and a handful of chopped herbs between every two layers to infuse flavor throughout the pie.
  4. Preheat your oven to 180°C (350°F). While the oven is heating, press down gently on the layered sheets to compact them slightly, ensuring they adhere well together.
  5. Place the baking dish in the preheated oven and bake until the top layer of pastry is golden brown and crisp. This should take about 20-25 minutes, but watch for the cheese to bubble and the pastry to puff up slightly.
  6. Once baked, remove the pie from the oven and let it cool for a few minutes. This will help the layers set and make it easier to cut.
  7. Finish the pie by sprinkling a final layer of chopped herbs on top for a fresh, aromatic touch. Serve warm, allowing the flavors to meld together beautifully, and enjoy with family and friends.
