Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by bringing 3 eggs and 100 g of butter to room temperature. This ensures they incorporate smoothly into the batter, creating a uniform texture. You can leave them out on the counter for about 30 minutes before starting the recipe.
  2. In a large mixing bowl, cream together the 100 g of softened butter and 150 g of sugar using a wooden spoon or an electric mixer. Continue mixing until the mixture is pale and fluffy, as this will help to aerate the batter, resulting in a lighter cake.
  3. Add the room temperature eggs one at a time to the butter-sugar mixture, beating well after each addition. This gradual incorporation prevents the batter from curdling and ensures a smooth consistency.
  4. Gradually sift in 200 g of flour into the wet ingredients, folding gently with a spatula or wooden spoon. Mix until just combined, being careful not to overwork the batter, which can lead to a dense cake.
  5. Preheat your oven to 180°C (350°F). Grease a baking pan with butter and pour the batter into it, smoothing the top with a spatula. Bake in the preheated oven until the cake is golden brown and a skewer inserted into the center comes out clean, indicating it is fully cooked.
  6. While the cake is baking, prepare the syrup according to your preferred recipe. The syrup should be warm but not boiling when you pour it over the cake, as this will allow it to soak in without making the cake soggy.
  7. Once the cake is done, remove it from the oven and let it cool slightly in the pan. Pour the warm syrup evenly over the cake, allowing it to soak in completely. This step adds moisture and sweetness, enhancing the cake's flavor.
