Indonesian Layered Pie 2 reflects the essence of home cooking in Indonesia, where precise measurements give way to intuition and experience. Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by bringing 100 g of butter to room temperature. This will make it easier to spread and incorporate into the pastry. While waiting, grate 200 g of cheese and set aside. This will be used in the layering process.
  2. Preheat your oven to 180°C (350°F). Lay out the 10 pastry sheets on a clean surface. Melt the butter gently in a small saucepan over low heat, ensuring it doesn't brown. Once melted, use a pastry brush to lightly coat each sheet with the butter, ensuring even coverage to help them crisp up during baking.
  3. Take the first pastry sheet and place it in a baking dish, pressing it gently into the corners. Sprinkle a portion of the grated cheese evenly over the sheet, followed by a pinch of your chosen herbs. This layering will create the signature texture and flavor of the pie.
  4. Continue layering by placing another pastry sheet on top of the cheese and herb layer. Repeat the process of brushing with butter, sprinkling cheese, and adding herbs until all sheets are used. Ensure the top layer is well-buttered to achieve a golden finish.
  5. Place the assembled pie in the preheated oven. Bake until the top is golden brown and the cheese has melted, which should take about 25-30 minutes. The pie is ready when the layers are crisp and the aroma of melted cheese and herbs fills the kitchen.
  6. Remove the pie from the oven and let it cool slightly in the baking dish. This resting period allows the layers to set and makes slicing easier. Serve warm, allowing the flavors to meld, and enjoy the pie as part of a shared meal.
