Ingredients

  • 300 gflour
  • 200 gcheese
  • 100 gbutter
  • 1egg

Method

  1. Begin by bringing the butter and egg to room temperature. This ensures that the butter is soft enough to incorporate smoothly into the dough, and the egg blends evenly without causing the butter to seize. Leave them out on the counter for about 30 minutes before starting.
  2. In a large mixing bowl, combine 300 g of flour with 200 g of grated cheese. The cheese should be finely grated to ensure it mixes well with the flour, creating a uniform dough. Use your hands to gently mix these dry ingredients, ensuring the cheese is evenly distributed throughout the flour.
  3. Add the softened 100 g of butter to the flour and cheese mixture. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs. This step is crucial for creating a flaky texture in the pastry.
  4. Crack the room-temperature egg into a small bowl and lightly beat it. Gradually add the beaten egg to the flour mixture, stirring with a wooden spoon until a dough begins to form. If the dough feels too dry, you can add a teaspoon of cold water to help it come together.
  5. Once the dough has formed, turn it out onto a lightly floured surface. Knead it gently a few times to ensure everything is well combined, but be careful not to overwork it, as this can make the pastry tough. The dough should be smooth and slightly elastic.
  6. Wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes. This resting period allows the gluten to relax, which will help prevent the pastry from shrinking during baking.
  7. Preheat your oven to 180°C (350°F). Roll out the chilled dough on a floured surface to about 5 mm thickness. Cut the dough into desired shapes using a cookie cutter or knife, and place them on a baking sheet lined with parchment paper.
  8. Bake the pastries in the preheated oven for 15-20 minutes, or until they are golden brown and the cheese has melted and bubbled on the surface. The pastries should be crisp on the edges and slightly soft in the center.
  9. Remove the pastries from the oven and let them cool on a wire rack for a few minutes. Serve them warm or at room temperature, allowing the flavors to fully develop. These pastries are perfect for sharing at the table, embodying the spirit of Japanese home cooking.
