Ingredients

  • 250 gflour
  • 150 gnuts — chopped
  • 100 gbutter
  • 100 gsugar
  • 1egg

Method

  1. Begin by removing the butter and egg from the refrigerator to bring them to room temperature. This ensures that the butter is soft enough to blend smoothly with the flour, and the egg will mix more evenly into the dough.
  2. In a large mixing bowl, combine 250 g of flour and 100 g of sugar. Use a whisk to evenly distribute the sugar throughout the flour, which will help prevent any lumps in your pastry.
  3. Add the softened 100 g of butter to the flour mixture. Using your fingers, gently rub the butter into the flour until the mixture resembles coarse breadcrumbs. This step is crucial for creating a flaky texture in the pastry.
  4. Chop 150 g of nuts into small pieces. You can use a mix of your favorite nuts, such as almonds or walnuts, for a varied texture. Stir the nuts into the flour and butter mixture, ensuring they are evenly distributed.
  5. Crack the room temperature egg into a small bowl and beat it lightly with a fork. Pour the egg into the flour mixture and use a spatula to fold everything together until a dough forms. The dough should be slightly sticky but manageable.
  6. Transfer the dough onto a lightly floured surface and gently knead it a few times to bring it together. Be careful not to overwork the dough, as this can make the pastry tough.
  7. Preheat your oven to 180°C (356°F). While the oven heats, roll the dough out to about 1 cm thickness and cut it into your desired shapes using a cookie cutter or knife.
  8. Place the cut pastries on a baking sheet lined with parchment paper. Bake them in the preheated oven until they are golden brown and the nuts are fragrant, which should take about 15-20 minutes. The pastries should feel firm to the touch.
  9. Allow the pastries to cool on a wire rack. Serve them warm or at room temperature, and enjoy the rich, nutty flavor that pairs perfectly with a cup of green tea.
