Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by taking 100 g of butter out of the refrigerator and allowing it to soften at room temperature. This will make it easier to cream with the sugar later. Also, bring 3 eggs to room temperature by leaving them out for about 30 minutes. This helps them incorporate more smoothly into the batter, ensuring a light and airy cake texture.
  2. In a large mixing bowl, cream together the softened butter and 150 g of sugar. Use a wooden spoon or an electric mixer on low speed. Mix until the mixture becomes pale and fluffy, which indicates that air has been incorporated, crucial for a tender cake.
  3. Add the room temperature eggs one at a time to the butter-sugar mixture, beating well after each addition. This gradual incorporation helps maintain the emulsion and prevents the batter from curdling. The mixture should become smooth and slightly glossy.
  4. Sift 200 g of flour into the bowl with the wet ingredients. Gently fold the flour into the mixture using a spatula. Be careful not to overmix; stop as soon as the flour is just incorporated to avoid a dense cake.
  5. Preheat your oven to 170°C (338°F). Grease a cake pan generously with butter to prevent sticking, then pour the batter into the prepared pan, smoothing the top with a spatula. Bake in the preheated oven until the cake is golden brown and a skewer inserted into the center comes out clean, indicating doneness.
  6. Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. This resting period helps the cake set and makes it easier to handle.
  7. While the cake is still warm, prepare the syrup for soaking. Use your favorite syrup, ensuring it complements the cake's flavor. Generously brush or pour the syrup over the top of the cake, allowing it to soak in and infuse the cake with moisture and sweetness.
