Persian Sweet Syrup Cake

Persian Sweet Syrup Cake is a cherished staple of home-cooked meals, a reflection of the relaxed yet generous spirit found in many Persian households. Traditionally, it graces the table during family gatherings or intimate celebrations, where the ritual of sharing is as important as the flavors themselves. This version captures the essence of what makes this cake a beloved treat—an unhurried, heartfelt preparation.

The cake itself is a tender, buttery delight, with each bite offering a harmonious blend of sweetness from its syrupy soak. The texture is soft yet substantial, inviting you to savor its richness. Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by bringing 100 g of butter to room temperature. This will make it easier to cream with sugar, ensuring a smooth batter. Also, take 3 eggs out of the refrigerator and let them come to room temperature. This helps them incorporate better into the batter, giving the cake a lighter texture.
  2. In a large mixing bowl, cream together the softened butter and 150 g sugar until the mixture is pale and fluffy. Use a hand mixer or a stand mixer on medium speed. This step is crucial as it incorporates air into the batter, which will help the cake rise.
  3. Add the room temperature eggs one at a time to the butter and sugar mixture, beating well after each addition. This gradual incorporation prevents the batter from curdling and ensures a uniform texture.
  4. Sift 200 g of flour into the wet mixture, folding it in gently with a spatula. Be careful not to overmix; you want to combine just until the flour is incorporated to avoid a dense cake. The batter should be smooth and slightly thick.
  5. Preheat your oven to 180°C (350°F). Grease a round cake pan with butter and lightly dust with flour to prevent sticking. Pour the batter into the prepared pan, smoothing the top with a spatula.
  6. Bake the cake in the preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean, indicating it is fully cooked. This should take about 25-30 minutes, but rely on the visual and toothpick test for doneness.
  7. While the cake is baking, prepare the syrup by gently heating it until warm. This will make it easier to soak into the cake. Once the cake is done, remove it from the oven and let it cool slightly in the pan for about 10 minutes.
  8. After the initial cooling, poke holes all over the cake using a skewer or fork. Pour the warm syrup evenly over the cake, allowing it to soak in completely. Let the cake absorb the syrup for at least 30 minutes before serving.
  9. Finish by garnishing the cake with chopped nuts or a dusting of powdered sugar, if desired. Serve the Persian Sweet Syrup Cake at room temperature, allowing the flavors to meld and the syrup to fully saturate the cake.
