Ingredients

  • 10pastry sheets
  • 200 gcheese
  • 100 gbutter
  • herbs — chopped

Method

  1. Begin by bringing 100 g of butter to room temperature. This will ensure it is soft enough to spread easily on the pastry sheets. If the butter is too hard, it won't coat the pastry evenly, which is crucial for the layers to bake properly.
  2. Grate 200 g of cheese and set it aside. The cheese will be used to layer between the pastry sheets, adding flavor and richness to the pie. Choose a cheese that melts well to create a creamy texture.
  3. Lay out your 10 pastry sheets on a clean work surface. Using a pastry brush, generously spread a thin layer of the softened butter on one side of each sheet. This will help the layers stick together and create a flaky texture once baked.
  4. Sprinkle a small handful of the grated cheese evenly over the buttered side of the first pastry sheet. Add a pinch of herbs to taste, ensuring they are evenly distributed. The herbs will infuse the pie with aromatic flavors.
  5. Carefully place the next pastry sheet on top of the first, pressing down gently to adhere. Repeat the process of buttering, adding cheese, and sprinkling herbs until all layers are stacked. This layering is essential for the pie's structure and flavor.
  6. Preheat your oven to 180°C (350°F). Transfer the layered pastry stack to a baking dish that fits comfortably, allowing the edges to remain slightly raised to prevent overflow. This will ensure even baking and a golden crust.
  7. Bake the pie in the preheated oven until the top is golden brown and the cheese has melted, which should take about 25-30 minutes. The pie is done when the layers have puffed up slightly and the edges are crisp.
  8. Remove the pie from the oven and let it cool for a few minutes before serving. This will allow the layers to set slightly, making it easier to cut and serve. Serve warm, allowing the flavors to be fully appreciated.
