West African Sweet Syrup Cake is a staple dessert that graces tables across the region, often appearing during family gatherings or festive occasions. Its origins lie in the home kitchens where cooks rely on instinct rather than precise measurements, ensuring each version is as unique as the hands that prepare it. Passed down through generations, this cake is a celebration of abundance, with ingredients measured by feel and shared with warmth.

This cake is a luscious indulgence, with a rich, buttery crumb that is both tender and satisfying. Ingredients

  • 200 gflour
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by bringing the 100 g of butter to room temperature. This will ensure it creams well with the sugar, resulting in a smooth batter. At the same time, take the 3 eggs out of the refrigerator to allow them to come to room temperature, which helps them incorporate better into the batter.
  2. In a large mixing bowl, cream together the 100 g of softened butter and 150 g of sugar using a wooden spoon or hand mixer. Mix until the mixture becomes light and fluffy, with a pale color. This step is crucial as it incorporates air, giving the cake its desired light texture.
  3. Add the 3 room-temperature eggs to the creamed butter and sugar, one at a time, mixing well after each addition. This gradual incorporation helps maintain the batter's smooth consistency and prevents it from curdling.
  4. Sift 200 g of flour into the batter, folding it gently with a spatula. Be careful not to overmix; you want to combine just until the flour is fully incorporated. The batter should be smooth and slightly thick, with no visible streaks of flour.
  5. Preheat your oven to 180°C (350°F). Grease a baking pan generously with butter to prevent sticking, then pour the batter into the pan, spreading it evenly with a spatula. The batter should settle smoothly, with no peaks.
  6. Place the pan in the preheated oven and bake until the cake is golden brown and a skewer inserted into the center comes out clean. The cake should spring back slightly when touched lightly on top, indicating it is cooked through.
  7. Once baked, remove the cake from the oven and allow it to cool slightly in the pan. While still warm, pour the syrup generously over the cake, allowing it to soak in. The cake should absorb the syrup, becoming moist and fragrant.
  8. Let the cake cool completely before serving. This allows the syrup to fully penetrate and the flavors to meld. Serve at room temperature, ideally with a garnish of nuts or a dusting of sugar if desired, to enhance the presentation and taste.
