Method

  1. Start by preparing the components for your Caribbean Bean Salad. Finely chop 1 onion and a small handful of fresh parsley. Rinse the 400 g of cooked beans under cold water to refresh them and remove any excess starch. Drain them well in a colander, shaking off any excess water, and set aside.
  2. In a large mixing bowl, combine the drained beans with the chopped onion. Drizzle 80 ml of olive oil over the mixture, ensuring the beans are well-coated. The oil will add richness and help the flavors meld together.
  3. Add 2 tablespoons of vinegar to the bowl. This will provide a bright, tangy contrast to the creamy beans. Sprinkle fine sea salt to taste, starting with a small pinch and adjusting as needed after tasting.
  4. Add the chopped parsley to the bowl. The parsley will add a fresh, herbal note that complements the other ingredients. Use your hands or a large spoon to gently toss the salad, being careful to keep the beans intact.
  5. Taste the salad and adjust the seasoning if necessary, adding more salt or vinegar to suit your preference. The salad should have a balanced flavor with a slight tang from the vinegar and a hint of saltiness.
