  2. Select a variety of fresh herbs such as cilantro, parsley, and mint. Roughly chop the herbs to yield about a handful, ensuring they are not too finely chopped to maintain their vibrant flavor. Add these to the bowl with the mixed greens.
  3. In a small bowl, combine 60 ml of olive oil with the juice of one lemon. Whisk them together until they are well emulsified. This mixture will serve as the dressing, offering a bright and tangy flavor that complements the fresh greens.
  4. Season the dressing with fine sea salt to taste. Start with a small pinch, mix, and taste. Adjust the salt gradually until the dressing has a balanced flavor that enhances the natural taste of the greens and herbs.
