Method

  1. Begin by washing 150 g of mixed greens thoroughly under cold running water to remove any dirt or grit. Pat them dry gently using a clean kitchen towel or a salad spinner to ensure they are crisp and not soggy when dressed.
  2. Prepare the herbs by selecting a mix such as cilantro, parsley, and mint. Rinse them well, then pat dry. Roughly chop the herbs, aiming for about a handful in total, to add a fresh and aromatic layer to the salad.
  3. In a large salad bowl, combine the mixed greens and the chopped herbs. This bowl should be large enough to allow for easy tossing without spilling.
  4. In a separate small bowl or a measuring cup, whisk together 60 ml of olive oil and the juice of one lemon. This will create a bright and tangy dressing. Season the dressing with fine sea salt to taste, starting with a pinch and adjusting as needed to balance the flavors.
  5. Pour the dressing over the greens and herbs in the salad bowl. Use your hands or salad tongs to toss the salad gently, ensuring each leaf is lightly coated without bruising them. The greens should glisten with the dressing but not be drenched.
